8/15 meal plan

Saturday
#smokersaturday
  • grill out with friends- take cut fruit and cucumber tomato salad similar to this one

Sunday
Favorites 
Moved from Saturday because we went to friends last minute
  •  Smoked ribs- use rub and baste 
  • Avocado ranch bag salad
  • Twice baked potatoes (previously frozen)- I make a large batch of these and then freeze them individually (plus halves for Paige) and just pull out what we need for easy dinner sides 

Monday
Pasta/seafood night

  • Snack dinner Sunday (moved due to a schedule change) to use the other half of our snack dinner cheeses and meats from two weeks ago

Tuesday
Taco Tuesday

  • Ground beef Korean Taco kit from Aldi- these things are AMAZING and included everything but the meat for a whopping $2.19.  We will add some coleslaw mix, shredded cucumber and sracha mayo


Wednesday
Instant Pot/Casserole/Grill
  • Chicken and Waffles- Using some of the "red bag chicken" from ALDI that is supposed to be a chick-fil-a dupe and serving it on some frozen Belgian waffles I got in a meal deal with ranch and buffalo drizzle.  Cut up a melon on the side.

Thursday
Asian or Mexican
  • Pulling a frozen thing of enchiladas from the freezer- we use these containers to freeze the perfect portion of things for us.

Friday-
Pizza or freezer

Now that I'm back to work cooking on Friday night doesn't happen so it has affectionately become pizza night, leftover night or anything I can pull from the freezer.  Phil will be working Friday nights for the next several months so it's really just Paige and I eating.
  • We are using some leftover garlic naan bread from last week that I froze to make our own pizza.  Paige will get one of the inexpensive pizza crusts from the 3 pack you can buy.
