10/3 meal plan

Our freezer is nice and full right now so we are cleaning out the freezer this week with several meats and sides or meals coming from the freezer.  


Saturday

#smokersaturday

Charcuterie board to use up some lingering cheeses and meats
  • also serving this spinach dip that I intended to make last weekend and never got around to it



Sunday
Favorites 
Pulled pork nachos
  • Refried beans spread in a baking dish, topped with pulled pork (previously smoked and frozen in these containers), topped with a drizzle of BBQ sauce lurking in the fridge and taco cheese
  • After baking at 350 for 20 mins, top with shredded lettuce, diced tomatoes and avocado
  • serve with chips for dipping

Monday
Pasta/seafood night

Mushroom Pork chops with spaetzle (special from ALDI) and roasted broccoli





  • Previously assembled and frozen in these containers and will just heat in oven at 350

Wednesday
Instant Pot/Casserole/Grill
Chicken sweet potato curry
  • excited to try this and using up some sweet potatoes and chicken we had lurking
  • serve over jasmine rice

Thursday
Asian or Mexican
Pasta and meatballs from the freezer

Friday-
Pizza or freezer
Veggie pizza
