8/29 meal plan

Saturday
#smokersaturday
"white wings" as Phil calls them- chicken breast pounded thin, then stuffed with Monterey jack cheese and jalapeno
-  smoked baked potatoes with cheese, sour cream and chives



Sunday
Favorites 
BBG chicken Nachos (to use up leftover BBQ chicken)- top chips with BBQ chicken, black beans, roasted corn, red onions
Then make this Poblano queso to drizzle over top

Monday
Pasta/seafood night

Salmon on the grill with a side of our lemon dill sauce from H‑E‑B, box of quinoa and grilled peppers, onions and mushrooms 

Tuesday
Taco Tuesday

Ground beef tacos
  • Top with lettuce, cheese, avocado, diced tomatoes 
  • Refired beans on side

Wednesday
Instant Pot/Casserole/Grill
  • Similar to above recipe but I use zucchini and squash instead of eggplant
  • Grill brats to go with it 

Thursday
Asian or Mexican
Lettuce wraps- use ground turkey and serve over jasmine rice

Friday-
Pizza or freezer
frozen pizza or leftovers

8/22 meal plan

Saturday

Brats in the smoker, zuchini and spinach casserole to use our Pippa Hill farms produce and some lurking feta cheese, freeze half in these containers for an easy veggie side another night, red potato packets

Sunday
Favorites 
Eggplant parmesan- This was DELICIOUS and really not that hard to make.  Toddler ate two helpings of the "chicken nuggets" 



Monday
Pasta/seafood night

Pulled BBQ chicken and coleslaw- using leftover shredded cabbage from tacos to make the slaw . Serve with fries

Tuesday
Taco Tuesday

Chicken teriyaki tacos with pineapple, avocado and shredded carrots.

Wednesday
Instant Pot/Casserole/Grill
Grilled peppers and zucchini with  angel hair pasta and grilled chicken breasts- Cut large chicken breasts in half and marinate with Lawrys.

Thursday
Asian or Mexican
Egg roll in a bowl served over some soybean spaghetti I've been dying to try. 

Friday-
Grill favorites or freezer
Pizza night- serving a frozen pizza for us and Paige gets a personal mini cheese one.

8/15 meal plan

Saturday

  • grill out with friends- take cut fruit and cucumber tomato salad similar to this one

Sunday
Favorites 
Moved from Saturday because we went to friends last minute
  •  Smoked ribs- use rub and baste 
  • Avocado ranch bag salad
  • Twice baked potatoes (previously frozen)- I make a large batch of these and then freeze them individually (plus halves for Paige) and just pull out what we need for easy dinner sides 

Monday
Pasta/seafood night

  • Snack dinner Sunday (moved due to a schedule change) to use the other half of our snack dinner cheeses and meats from two weeks ago

Tuesday
Taco Tuesday

  • Ground beef Korean Taco kit from Aldi- these things are AMAZING and included everything but the meat for a whopping $2.19.  We will add some coleslaw mix, shredded cucumber and sracha mayo


Wednesday
Instant Pot/Casserole/Grill
  • Chicken and Waffles- Using some of the "red bag chicken" from ALDI that is supposed to be a chick-fil-a dupe and serving it on some frozen Belgian waffles I got in a meal deal with ranch and buffalo drizzle.  Cut up a melon on the side.

Thursday
Asian or Mexican
  • Pulling a frozen thing of enchiladas from the freezer- we use these containers to freeze the perfect portion of things for us.

Friday-
Pizza or freezer

Now that I'm back to work cooking on Friday night doesn't happen so it has affectionately become pizza night, leftover night or anything I can pull from the freezer.  Phil will be working Friday nights for the next several months so it's really just Paige and I eating.
  • We are using some leftover garlic naan bread from last week that I froze to make our own pizza.  Paige will get one of the inexpensive pizza crusts from the 3 pack you can buy.

burgers and hot dogs for Paige's party.  Sides: fruit salad, veggies with ranch and individual chip bags

Monday
Pasta/seafood night

Stouffers lasagna from the freezer because this is my first day back at work and little man's first day of daycare and we need easy.  

Tuesday
Taco Tuesday

shredded chicken tacos with hatch salsa- put in crockpot in the am and let simmer all day while im at work.  Top with sour cream, cheese, tomatoes and avocado

Wednesday
Instant Pot/Casserole/Grill
Roasted sweet potato, broccoli and sausage bake - sub brussel sprouts for the broccoli

Thursday
Asian or Mexican
Butter chicken with rice- this recipe is seriously the best and easiest butter chicken recipe 
Roasted broccoli- toss in olive oil and salt and roast for 20 minutes on 400
Friday-
Pizza or freezer
Cuban pizza from freezer and Paige gets her own pepperoni or cheese pizza with our Aldi pizza crust

8/1 meal plan

Saturday

Continuing to try some new meals this week with a bacon wrapped sausage and cheese roll.  We also froze some mac and cheese to smoke from a couple weeks ago using this container and will be smoking it too.

Sunday
Favorites 
Finally convinced Phil to do a snack dinner Sunday.  Making a large charcuterie board with meats and cheeses from ALDI, some pickles and pickled okra from the farmers market, french bread and crackers.  


** Phil starts two- a-days for football this week so dinners are going to be as easy as possible since mommy will be home with both kiddos trying to entertain and cook!***


Monday
Pasta/seafood night
Pulling out a portion of chicken spaghetti or king ranch casserole from the freezer here frozen in these perfect size containers and serving with a side salad and watermelon.

Tuesday
Taco Tuesday

Just going with some good ground beef and bean tacos tonight to keep it simple.  Top with salsa, avocado, cheese, lettuce and tomato.

Wednesday
Instant Pot/Casserole/Grill
French dip sandwiches (pulled from freezer and reheat using mini crockpot) served on toasted Brioche buns (leftover from a previous week's burgers), fruit and fries.

Thursday
Asian or Mexican
Moved Sweet and Sour stir fry from last week due to having a lot of leftovers we needed to use up.  This was easy to bump because the chicken and veggies are already frozen and the rest of the stuff is canned.

Friday-
Grill favorites or freezer
Pizza I found from ALDI (either cuban or greek) and Paige gets her own mini cheese and pepperoni pizza with the package of pizzas I also found at ALDI.  These are perfect sized and have sauce packets for each pizza.
