2/27 meal plan

Grill or favorites

Grilled chicken, grilled veggies angel hair pasta 

  • Marinate the chicken with Lawry's 20 minute marinate
  • Season veggies with olive oil, lawrys seasoning and lemon pepper seasoning

Sunday

Ravioli, meatballs and salad

Phil is home with kiddos and I am out to dinner with friends

Monday
Pasta/seafood night
Salmon, asparagus, rice
  • Use our favorite lemon dill sauce on the grilled salmon
  • Boxed rice and roasted aspargus topped with butter and lemon pepper seasoning
Tuesday
Taco Tuesday/Soup and sandwiches
*Dance class and away game*
  • Leftover soup from freezer
  • Snack box for Paige
Wednesday
Instant Pot/Casserole/Grill
Butter chicken served over rice
  • Using a jar of sauce I scored at Aldi the other week
  • roasting broccoli at 400 for 20 mins tossed in olive oil and salt
  • serve with naan bread (from freezer)
Thursday
Asian or Mexican
Lettuce wraps 
  • Use package sauce but double water chestnuts because they are a Paige favorite 
  • Serve over rice

Friday-
Pizza or freezer

Phil game so its pizza for the kiddos and burgers for me on the road

Phil will have all district meeting so we are just eating leftovers

Monday
Pasta/seafood night

Aldi red bag chicken sandwiches and fruit

  • Use airfryer to make the famous Chick-fil-a copy cat sandwiches with brioche buns, chick fil a sauce and pickles
  • serve with whatever fuit we have on hand after the snowpocalypse
Tuesday
Taco Tuesday/Soup and sandwiches
*Dance class and away game*
  • Leftover soup from freezer
  • Snack box for Paige
Wednesday
Instant Pot/Casserole/Grill
Pork chops risotto and broccoli
  • marinate pork chops with teriyaki Lawrys
  • Risotto is from a Aldi package
  • Roast broccoli at 400 after tossing in olive oil and sea salt for about 20 minutes

Thursday
Asian or Mexican
Cuban sliders and fries
  • Previously frozen from my Christmas cooking spree and I am so thankful
  • Fries in the air fryer
  • fruit for the kids

Friday-
Pizza or freezer

Zuppa Toscana Soup and garlic bread

  • Using up some leftover kale and hot sausage that were lurking
  • Adding gnocci instead of potatoes for ease

Meatloaf, mashed potatoes, roasted broccoli
  • The easiest and best meatloaf recipe ever
  • Roasted broccoli, tossed in olive oil and salt.  Roast at 400 for 20 mins
Monday
Pasta/seafood night
Chili
  • Chili served over fritos and topped with sour cream and cheese
  • add diced chili tomatoes
Tuesday
Taco Tuesday/Soup and sandwiches

  • Leftover soup from freezer
  • Snack box for Paige
Wednesday
Instant Pot/Casserole/Grill
  • previously frozen in containers like this
  • stuffed with shredded rotisserie chicken, spinach, cheese, black bean and corn
  • use premade HCF enchilada sauce
  • heat for 30 minutes from thawed
Thursday
Asian or Mexican
  • using ground beef to make a simple beef and broccoli meal
  • serve over jasmine rice

  • Thaw shredded chicken from the smoked chicken last weekend
  • Make this delicious and easy alfredo sauce
  • roast cut broccoli (prepped on Sunday) in olive oil and salt

BBQ Brisket Nachos
  • previously frozen brisket thawed
  • line a glass baking dish with refried beans, top with brisket and mexican shredded cheese and bake for 20 mins
  • Add sliced tomatoes, avocado and lettuce and drizzle with BBQ sauce

  • previously frozen and made over christmas break
  • side of cut fruit
