Salmon Cesar pasta salads.  Grill the salmon with a blackened  seasoning and serve over salads.  Side of roasted sweet potatoes.

Asian or Mexican
Chicken stir fry, use chicken breast and sauté with frozen Asian veggies and water chestnuts. Use sweet and sour sauce and serve over rice. 

Friday-

Make your own pizza night- grabbing some fun mini pizza crusts, sauce and mozzarella then topping with combos pepperoni, mushroom, red onion, spinach

Pork chops (marinate with Lawrys)
dill pickle pasta salad (love this recipe but be warned it makes a healthy serving so be prepared to eat leftovers (but it is delicious) 
roasted broccoli- toss in olive oil and sea salt and roast in the oven at 400 until slightly browned (around 20mins)

Thursday

Use up leftover buffalo sauce, canned chicken and cream cheese

Grill favorites or freezer

Entry table makeover



With all of this staying home lately I've been making the time to work on a few home projects.  I built a shelf for the back patio to hold alllllllll the miscellaneous toys and was so proud of how it turned out.  I braved a couple cuts with the circular saw and it was my first piece I built from scratch.  I've been trying to finish up some odds and ends around the house inside as well. Lately I've been scouring our local Facebook Marketplace for an entry table.  I was totally fine redoing one or buying one already done but everything I could find was more than I wanted to pay.  I finally stumbled upon the perfect one (for only $20!!!) from a local church trying to get rid of things. I instantly texted my husband (who so lovingly embraces all my home projects) to pick it up the next day.  


My favorite thing about using chalk paint is that it takes almost no prep to be ready for paint.  Just a wipe down of cobwebs and dust that was on it and it was ready for paint.  Over the different projects I've done I have used pre-made chalk paint (Annie Sloan) and have made my own.  I find it much more economical to just but different matte paint colors and then I can make calk paint using plaster of paris and water when I need it for furniture.  I happened to already have some bright white flat paint and plaster of paris on hand.  To make the chalk paint first mix 1/2 cup plaster of paris with a 1/2 cup warm water.  Make sure the plaster of paris dissolves.  Then add about 1 1/2 cups of your chosen paint color.  This will create your chalk paint. I usually need to do two coats, but much prefer two thinner coats to one clumpy one.  Here is what it looked like after my two coats of paint:


This was already a huge improvement.  I could have just been done here, but really liked the entry tables with two shelves.  So off to home depot I went for some 1x4 boards.  I cut the boards to 14 inches each to place on the bottom.  I have had a Ryobi circular saw for almost a year now but have been too scared to use it.  I used a clamp the clamp the wood to a table and cut the board and was pleasantly surprised with how easy (and not scary) it was to use! The edge pieces required a little more work but I am proud that I was still able to do it.  Each piece got painted with the chalk paint before attaching it.



Once the pieces were painted I used 1 1/2in drywall screws to attach to the frame that was already there.  They have a sharp thread but I did pre-drill the holes to make it easier for me to screw them down.

After everything was attached I gave it a quick sanding with some 220 grit sandpaper to smooth out the paint and make it super soft.  The last step was to apply two coats of a polycrylic.  I like to use Minwax Polycrylic.  I have also used Annie Sloan wax but find the process to be more labor intensive and doesn't last as long.  You can get the polycrylic at any Home Depot or Lowes.  I apply one coat, give it another light sanding with 220 grit paper and then apply a final coat and allow to dry.

All that was left was to attach some new hardware.  Here is a link to the ones I used.  I filled in the previous holes with wood putty before painting.  And Voila!! It was all done!

We found a pre-seasoned brisket at Aldi the other week and I'm so excited to try it in the smoker.  Serve with some Salt Lick BBQ sauce, red potato salad and fresh fruit.

Grilled chicken (marinate with Lawrys 20 minute mariade) moved from last week served with grilled zucchini and squash (tossed in olive oil, lemon pepper seasoning, and Lawrys) and pesto tortellini.

Freezer casserole- I'm using one of the casseroles I froze before I had Elliott- either chicken spaghetti or king ranch casserole.  I used these containers to freeze casseroles and they work like a charm and are easy to label and stack.

Tuesday
Taco Tuesday

Leftover brisket for nachos- 
- Spread refried beans in bottom of a baking pan. Too with chopped brisket and Mexican cheese.  Bake at 350 for 20 mins or until cheese is melty.  Top with tomato, lettuce, avocado, and BBQ sauce

Leftovers/clean out the fridge

Thursday
Asian or Mexican
Leave for Vacation and will be spending the night in Dallas before a very early flight Friday- eating take out

Shredded chicken tacos and refried beans. Cook the chicken in some green salsa in the crockpot all day and top with lettuce, tomato, sour cream and avocado. Serve with refried beans

Wednesday
Instant Pot/Casserole/Grill
Grilled chicken and squash/zucchini marinated in olive oil and lemon pepper and garlic seasoning.  Served with tortellini and pesto sauce as a side.

Thursday
Asian or Mexican
Ground turkey lettuce wraps using this sauce- We have to get it on Amazon lately because HEB is always out but we probably eat them every couple weeks so we use the sauce packets regularly.  We add extra water chestnuts because Paige loves them and will try to eat all of ours if we don't. Served with a side of Jasmine rice.

Friday-
Grill favorites or freezer
Pork chops, roasted red potatoes and brussel sprouts with balsamic glaze.

This week he smoked a bacon wrapped pork loin with a dry rub and smoked mac and cheese.  This was probably the best mac and cheese I've ever eaten and we were able to save to freeze in these containers for another time.

Coronacation meals

So it seems that ever since Corona virus hit things have been a little crazy in everyone's world.  For me one thing that happened was that I couldn't count on getting a lot of the regular meal items I was used to getting.  I wanted to minimize time at the store, and the number of stores I went to.  We as a family also found that Aldi seemed to always be the best stocked store and the least busy, which helped to limit our exposure.  Because of this I would go to the store with a list in mind hoping I could find certain items but sometimes having to change it while at the store.  Aldi also doesn't have the same selection of HEB so we couldn't always find the right ingredients for meals so I had to try to plan accordingly.  We stocked up and froze a lot of chicken and ground beef, as well as some shrimp, fish fillets, pork tenderloin and pork chops.  This gave us a base for a lot of meals that I will list below.  The night before I move anything frozen that we are planning to use to for dinner the next night to the fridge so its ready to go.  I also keep a list of meals handy that we can choose from depending on schedules and weather to try to help make sure I freeze items before it goes bad, or maximize the fresh produce we did buy.  Overall, I feel like we have been doing well with a variety of meals, including several of our favorites and changing up the menu each night.  You will notice a lot of repeats (meat marinated with Lawry's- seriously guys these are the easiest and best mariates for both meat and veggies, roasted broccoli- the toddler will eat almost an entire head of broccoli by herself but won't touch a green bean, tacos- yes we love all kinds of tacos and mexican food and probably eat them at least once a week).  We've really been enjoying spending time and eating meals on our back patio so we have been trying to grill as much as possible when the weather is nice.  We also often serve the meals with whatever fruit is lurking in the fridge along with the listed sides.

Nachos, (refried beans, browned ground beef and cheese baked at 350 for 20 mins) then topped with lettuce, tomatoes and avocado and served with chips

- This is a super easy meal, that comes highly toddler and husband approved.

-I've been dying to try this soup and a rainy day was the perfect excuse, it was delicious and a hit with the toddler.
